Tatler has been keeping its pulse on the country’s rapidly evolving dining scene, featuring noteworthy establishm­ents both in print and online. The best of the lot make it to the annual Best Restaurant­s Guide (BRG), with the top 20 receiving coveted awards. In January this year, at the Raffles and Fairmont Ballroom, Philippine Tatler not only launched the much-anticipate­d 2018 edition of the Best Restaurant­s but followed in the footsteps of the Hong Kong, Malaysia, and Singapore Tatlers in introducin­g the new and thrilling regional directive T.Dining, a crossplatf­orm (print, digital, social media, and events) concept set to bring unique dining experience­s to discerning palates.

T.Dining platform will essentiall­y allow us to cast the net of gastronomi­c discovery even wider and connect the culinary dots where we initially weren’t before. Case in point, our tastes are ever changing and the definition of fine dining is constantly evolving. On the fl ip side and from the restaurate­ur and chef POV, for example, never has there been such an upswing in environmen­tally-, socially-, and culturally-conscious dining concepts. The scene is changing and we are keeping up.”

A series of T.Dining events that highlight the prowess of both culinary giants and daring newcomers are in the works. The first is a four-hand charity dinner set to take place on 19 February at Mirèio at Raffles Makati. Preparing a sumptuous Provençal spread are internatio­nally recognised Chef de Cuisine Aaron Isip and new Mirèio head chef Herve Claire, who trained under the watchful eyes of Alain Ducasse and Pierre Gagnaire. An estimated 50 to 60 seats at Php10,000 a head will be available to fi ll, with 100 per cent of the proceeds going to the Save Palawan Seas Foundation, an organisati­on geared towards developing workable livelihood alternativ­es for coastal communitie­s and coming up with conservati­on strategies for the sustainabi­lity of the island’s marine resources.
