Holiday Inn goes Cordillera

AFARM to table spread is being offered by the Holiday Inn Baguio City Centre at its Lamisaan dining hall. Executive Chef Alwin Mantuano proudly presents a Cordillera­n inspired menu as a staple to the internatio­nal chain’s food experience.

Mantuano’s menu is a fusion of internatio­nal flavors compliment­ing the fresh and vibrant Cordillera­n cuisine starting off with the sinigang na salmon sa sampaloc with watercress followed by the Carpaccio di La Trinidad, a carpaccio of beetroot topped with fresh, handpicked Baguio salad greens with wild fern, watercress, Sagada oranges and feta cheese with a honey calamansi dressing

Mantuano has taken a liking to the local watercress saying it gives a distinct flavor, taking advantage of its abundance in the area.

Main courses include a Trio of air fried Bagnet, composed of binagoonga­n paired with local vegetables tossed in shrimp paste, kare kare with classic peanut sauce and adobo served with a 64 degree egg and pickled watemelon skin.

Part of the main dish is a Chicken supreme de Cordillera is a frenched chicken stuffed with a cristacean farce, served with highland pilaf and finished off with organic yogurt garlic dressing and grilled baguio vegetables with creamy bagna caoda has brocolli, cauliflowe­r, shallots, zuchini, carrots, squash and cherry tomatoes tossed in umami filled creamy yogurt infused with bagana caoda.

Dessert includes a Sagada orange suffle is light and fluffy French suffle with Sagada orange and grand manier finished with a cafe mocha sauce.

Mantuano said ingredient­s are sourced fresh from nearby towns assuring quality for the Holiday Inn standard for dining which is seen in the all-day breakfast as well as the November special featuring three kinds of homemade highland pandesals infused with beetroot, squash and watercress and hand cut pasta of the hotel will also feature the three ingredient­s infusing signature sauces with the highland flavors.

Holiday Inn Baguio City Centre general manager Joan Acott assures the brand of hospitalit­y of the InterConti­nental Hotel Group (IHG) will bring an enjoyable hotel experience to patrons with its 185 guest rooms, a ballroom that can accommodat­e 600 guests with function and meeting rooms for small group discussion­s.
