One festive lunch

How we celebrate Christmas is distinctly Filipino. For starters, lechon, the main attraction, is a must and placed right at the center on the dinner table.

Bluewater Resorts—a collection of Filipino-owned resorts in Maribago, Sumilon and Panglao—welcomes the holidays with “Pasko sa Bluewater 2017.”

Last Nov. 20, media guests were treated to a special lunch as Dedet dela Fuente of Pepita’s Kitchen brought in her unique rendition of Cebu’s favorite, lechon, through a degustacio­n lunch held at Bluewater Maribago Beach Resort’s Allegro restaurant.

Hailed as the lechon diva by her followers both residing here in the country and abroad, dela Fuente aims to make lechon a global sensation and has bagged various awards for her special stuffed lechon, one of which is the “Tastiest Dish in Asia” by the Chowtzer group of London. Meanwhile, her “Hayop na Degustacio­n” was praised by Lifestyle Asia, awarding it as the best dining experience in Asia.

She’s taken her degustacio­n dinners all over the world including New York, Hong Kong and Singapore. It was that Monday that select guests had the opportunit­y to be a part of such a unique culinary experience. The 11-course lunch brought in flavors from key regions of the country. To start, guests drank “Gayuma ni Pepita,” calamansi juice with local liquor poured over cotton candy. From there, some of the dishes served included mixed greens with atcharang nata de coco of Pampanga called “Nata de Achara salad;” crab claw in gulong gulong sauce called “Sipit Sarap;” “Hiplog” (hipon and itlog); and the two kinds of stuffed lechon de leche awarded in London: the “Truffle Rice Stuffed Lechon;” and “Garlic, Chilies and Herb Stuffed Lechon.”

All throughout the holiday season, Bluewater Resorts will be showcasing the creations of Dedet such as her stuffed lechon and other menu items during lunch on weekends at Bluewater Maribago Beach Resort, Bluewater Sumilon Island Resort and at Bluewater Panglao Beach Resort; not to mention at the barrio fiesta dinner at the Allegro Restaurant in Bluewater Maribago and at Bluewater Panglao’s Aplaya Restaurant every Saturday until Dec. 30 as part of the “Pasko sa Bluewater 2017” festivitie­s.
