Proudly Davao Silvanas

SILVANAS, a Filipino dessert with a layer of buttercrea­m sandwiched between two meringue wafers and coated with toasted cake crumbs, has grown into popularity among Filipinos.

Here in Davao City, House of Sylvanas by Paulyns has been making delicious silvanas since 2014.

Jen Villamar, co-owner of House of Sylvanas by Paulyns , said the company started selling their silvanas online.

She said they learned about a silvana recipe through her father's friend, who is from Nueva Ecija, where the delicacy originated. The family invited the friend to come over to Davao City to train her sister, who is a culinary graduate, on how to make silvanas.

Since they started in 2014, the company continues to grow as they experience increased demand and started to cater to companies.

In March this year, they opened a small shop in front of their home in Matina, Davao City to be able to cater to their growing demand.

Aside from the silvanas being available through their Facebook page and at their store, they have recently been participat­ing in The Weekend Market at SM Lanang Premier.

Villamar said The Weekend Market has been a huge help in making their brand and products known to Dabawenyos. She said their first participat­ion in April, they were only able to sell 20 boxes a day but by June, they are already selling 50 boxes a day.

She noted the positive effect of their participat­ion in The Weekend Market as House of Sylvanas by Paulyns became known to the public.

At present, they have developed four flavors -- classic, matcha, chocolate, and durian. Villamor said they developed these flavors due to requests from customers.

She said the durian flavor, which also has durian pulp, is a bestseller among tourists, balikbayan­s, and Dabawenyos alike. This is also the flavor that is usually being bought for pasalubong­s.

The classic silvanas is priced at P160 per box (10 pieces); the flavored silvanas are at P170/box; and the assorted flavors is at P190/box. Villamar said the assorted only includes matcha, chocolate, and classic.

"We did not include durian in the assorted since it will overpower the other flavors," Villamar said.

Villamar said they hope that their silvanas will become a must-have pasalubong of Davao City like the durian candies. They also hope to put up another store in the

downtown area in the near future.
