Begin your experience at the bread, charcuteri­e, and salad stations by the left side from the entrance and work your way through the other stations counterclo­ckwise for a nice gustatory flow.

• The entrées are arranged by cuisine: Indian/Moroccan, Filipino, Italian, Spanish, and then the carving station. Don’t miss the beef caldereta, a traditiona­l beef stew with potato, carrots, black olives, and red bell pepper.

• Try the pala-pala chicken inasal as well—which is the restaurant’s version of the signature Negrense dish served the way it would be in a pala-pala (grill) restaurant in Bacolod. There is also an array of marinated fish, pork, and chicken to pick from, all of which can be grilled à la minute.
