New York’s Maharlika and Jeepney lend bartender and restaurate­ur Enzo Lim to the cocktail bar of Tola. The Bagobo word for fire, “Daba-Daba,” from which Davao is said to derive its name, becomes a coffee libation that’s worth a try here.

• Indulge in the combinatio­n of the inasal na bagaybay’s (grilled tuna sacs) deep flavour and texture, or crunch into the meat of a fried tuna tail with the pakfry.
