We are just going to come out and say it: The metro sorely needed a Metronome. French cuisine has always faced a tough culinary crowd in the Philippine­s.

But we bet your bottom dollar that this rare gem is staying put. As restaurate­ur and Metronome co-proprietor Elbert Cuenca put it, “More often than not, when someone hears the word ‘French,’ they expect it to be serious, formal, fine…heavy. We’re breaking these expectatio­ns and giving you something different, more special.” Taking on the challenge with Cuenca are Joël Robuchon-trained chef de cuisine, Miko Calo, Alain Borgers ( the former GM of Makati Shangri-La), and branding whiz, RJ Galang. Instead of formal-course dining, here, one can expect a well thought out progressio­n of ingredient-driven rather than concept- driven dishes curated and calibrated by Calo, allowing diners to create a degustatio­n for themselves. Further augmenting the delightful savoire- faire is a tightly curated wine list. Building on the memorable Metronome experience are the bright and crisp interiors brilliantl­y executed by Noel Bernardo.
