Waterfront Cebu City Hotel & Casino’s “Gourmet Walk” has long been consistent­ly introducin­g something new for Cebuanos and visitors to Cebu, what with each of its dining outlets unceasingl­y serving scrumptiou­s arrays of season-inspired menus and inviting entrées.

This February, the internatio­nal resto hub’s Madeline specialty pastry and confection­ary shop highlights a novel selection of delights in time for the season of love – an offering that’s masterfull­y prepared by the hotel’s new Executive Pastry Chef Xavier Vanderwegh­e.

Dubbed “From Belgium with Love,” the offering’s main highlight are macarons by Chef Vanderwegh­e.

Keen on augmenting one of the traditiona­l macaron’s often-overlooked ingredient­s – almonds – the Belgian patisserie takes an elemental approach in preparing the treats that are part of “From Belgium with Love” – centered on letting a special’s ingredient­s contribute to its delectable flavors and tangs in pursuit for authentic charaster.

Not one to let needlessly frivolous flavors muddle the roles that ingredient­s play in the making of pastries and treats, Chef Vanderwegh­e is backed by close to 26 years’ experience in in his new position as Waterfront’s new Executive Pastry Chef. He has had previously worked in various regions in the world, manning kitchens in his home country Belgium, in Singapore, in Jakarta, Indonesia and in Qatar.
