Have you ever wondered how even the faint aroma of something you ate on a vacation instantly takes you back to the moment you experience­d it?

The smell of baby back ribs — smoked the natural way — sizzling on the grill transports me back to Farmstead, a former nursery barn turned restaurant along Long Meadow Ranch in St. Helena, the heart of Napa Valley, where the food is delicious, creative, fresh and unique. Two things stuck in my mind during my first trip to Palawan: the scary flight during an impending typhoon, and the delicious food that awaited us at Baya Resto Lounge at Two Seasons Coron Bayside.

The hotel, which opened a year ago, used to serve as the welcome center for guests booked at Two Seasons Island Resort & Spa. Those whose flights arrived late would often have to stay overnight. Today, Two Seasons Coron Bayside is a new full-service hotel that’s become the talk of the town, not only for its exceptiona­l service and amenities, but also for its food, glorious food.

Baya Resto Lounge chef Felwin Pangilinan makes use of ingredient­s that are in season or readily available at the nearby wet market.

Coron is quite known for its abundant and inexpensiv­e seafood and chef Felwin takes advantage of these fresh produce to come up with his signature dishes that have made a lasting mark on our palate.

Danggit lamayo is a must-try when in Coron — make that Two Seasons Coron Bayside. A cross between your regular danggit and daing,

danggit lamayo is rabbitfish that’s cut in half, not heavily salted (as compared to the regular danggit), partially sun-dried, then marinated in vinegar, garlic and pepper.

Chef Felwin then fries it in hot oil, making sure that the head and fins are crisp. And because it’s partially dried, it’s meatier and the taste of the garlic comes through. It’s best eaten with garlic rice and a sunny side-up egg.

Then there’s the sensationa­l lengua sisig topped with egg; the succulent and tasty butter garlic prawns; the crocodile barbecue, the well-seasoned lechon kawali that’s deep-fried to perfection; the über-fresh lobster sashimi; and the restaurant’s signature fare — Four Cheese Pizza. The crust is crisp yet chewy and oozes with cheesy goodness.

The food at Baya Resto Lounge of Two Seasons Coron Bayside is so good that it’s slowly gaining popularity not just among the locals but foreign tourists as well.

Did I mention that the resto is IG-worthy? The marine-themed restaurant features resin lamps that look like oversized jellyfish and change color every few seconds. Wooden posts, weathered tabletops and the staff’s scubainspi­red uniforms complete the nautical theme.

YOUR GATEWAY TO CORON ISLAND

At Two Seasons Coron Bayside, guests can choose from four spacious, elegantly designed room categories: Standard Bayview, corner Bayview, Deluxe and the Grand Panorama Suite.

A total of 48 well-appointed rooms and suites afford comfort and convenienc­e, as well as relaxing views of the bay and of forest thickets. For sweeping perspectiv­es of Coron Bay, book the Panorama Suites. These rooms (there are only three) offer such incredible sights.
