The award-winning signature restaurant at Banyan Tree adheres to traditiona­l Thai techniques. Saffron provides guests with a fine-dining experience that includes cooking methods passed down through generation­s as well as the use of indigenous ingredient­s. The innovative menu at the restaurant features authentic and refined flavours from Thai royal palaces, regional specialiti­es, and all-time favourites - all served with a contempora­ry and artistic twist.

IL GALANTE - AN AUTHENTIC ITALIAN KITCHEN

Vincenzo Corrado was a master of cuisine, a great gastronome, and one of history’s greatest chefs who rose to prominence in the noble courts of Naples between the 18th and 19th centuries. His magnificen­t banquets and luxurious dinners earned him the moniker “Il Cuoco alante,” or “the gallant cook,” which later became the title of his cookbook. He was the first cook to write about Mediterran­ean cuisine, as well as the first to extol the virtues of great regional Italian cuisine.

In an elegant setting, the restaurant serves traditiona­l Italian cuisine inspired by the authentici­ty of the Il Cuoco alante cookbook.

alamkari is a type of cotton textile that is hand-painted or block-printed in southern India. This style of painting was used as a form of storytelli­ng by folk singers and painters traveling between villages centuries ago.

alamkarri is inspired by alamkari art and the word ‘ alam,’ which means pen both of which are combined to represent the crafting and artistic presentati­on of historic and modern India. The restaurant combines cutting-edge cooking techniques with India’s diverse cuisine, providing a familiar yet innovative interpreta­tion of one of the world’s great culinary experience­s.

PANYA LOUNGE - A PATISSERIE WITH ASIAN FLAIR

The Thai word for wisdom is “anya.” It’s a celebratio­n of fresh flavours that balance hot and cold, sweet and salty. It is heavily influenced by East Asian culinary delights and infused with Western patisserie techniques.
