With sig­na­ture dishes from Como Ho­tels and Resorts prop­er­ties around the world, as well as orig­i­nal con­coc­tions, its mod­ern take on clean­liv­ing food is now a per­ma­nent fix­ture at Dempsey Com­plex.

The back­bone of the Como brand (owned by fash­ion-and-lifestyle doyenne Mrs Christina Ong, who also owns re­tail em­pire Club 21) is the de­sire to pro­vide lux­ury ex­pe­ri­ences. The lat­ter in­clude travel, re­tail and din­ing – for the dis­cern­ing.

And Como Cui­sine stands out in a world full of brave new food and brave new chefs. Some say it’s in­vig­o­rat­ingly new, yet com­fort­ing. Some say it’s health-con­scious food that tastes as good as it looks. They’re not wrong.

“Como Cui­sine is an ap­proach to food that is gen­er­ous in flavour and qual­ity, but re­strained in ex­e­cu­tion,” says Ti­mothy de Souza, ex­ec­u­tive chef at the Como Dempsey Com­plex. What he means: The dishes have min­i­mal gar­nish­ing to al­low the pro­duce to speak for it­self.

De Souza’s ca­reer has taken him as far as the Caribbean. It was his An­glo-In­dian her­itage that kicked off his pen­chant for fus­ing flavours from around the world, and this prominently fea­tures in Como Cui­sine’s new dishes – mostly unique spins on tra­di­tional recipes from the re­gion.

He adds: “In Sin­ga­pore, cul­tural di­ver­sity is a cat­a­lyst for cre­ativ­ity, and we de­light in this op­por­tu­nity to bring to­gether in­gre­di­ents and tech­niques to pro­duce some­thing new and un­ex­pected.” – HIY Como Cui­sine, Block 18A Dempsey Road.
