THREE’S A CROWD
A traditional Japanese kaiseki menu is like a journey through a place, with various dishes reflecting local produce and shifting seasons. With its multiple courses, a kaiseki meal typically takes two to three hours to finish. Kohantei, a new restaurant in Dubai, offers such an experience. Given the elaborateness of the menu, the restaurant offers only five tables in an intimate dining area, along with three private dining rooms. Executive chef Hisao Ueda created the menu based on the old tradition of Omotenashi or Japanese hospitality, and uses seasonal ingredients sourced from Japan.
