The 2018 Swiss Michelin Guide awards a Michelin star to IGNIV at Badrutt’s Palace Hotel at St. Moritz. Instead of having guests choose from a menu, IGNIV uses a fine dining and sharing concept with many varied dishes. Each dish is served on a small plate or platter and placed at a centre table, from which guests can serve themselves as they please. Chef Marcel Skibba helms the kitchen with a team of 15, and focuses on regional products. During the summer and autumn seasons, when IGNIV St. Moritz is closed, he works as Andres Caminada’s sous chef at the three-starred Schloss Schauenste­in.
