Once again, it was the singing of the Na­tional An­them that sig­nalled the start to The In­ter­na­tional Wine & Food So­ci­ety of Sin­ga­pore’s an­nual black-tie Na­tional

Day din­ner. Held at the Four Sea­sons Ho­tel Sin­ga­pore, the sump­tu­ous af­fair was en­trusted to chef Gio­vanni Spe­ciale, whose menu was de­signed to re­flect the sea­son­al­ity of the fresh­est pro­duce. Wines such as Henri Abelé 2002, Hen­schke Ab­botts Prayer 1998, and Claren­don Hills As­tralis 2004 ac­com­pa­nied the five-course gas­tro­nomic jour­ney, which cul­mi­nated with an Amedei Choco­late Sphere for dessert and Dow’s Vin­tage Port. More than an ex­cuse for mer­ri­ment, the gath­er­ing also raised funds for the Sin­ga­pore Cheshire Home through an auc­tion of rare bot­tles do­nated by IWFSS mem­bers. The top lot was a Château Haut-brion 1982 do­nated by Club Pres­i­dent Glenn Chin Chao and his wife Sy­monne Lim.
