Once again, it was the singing of the National Anthem that signalled the start to The International Wine & Food Society of Singapore’s annual black-tie National
Day dinner. Held at the Four Seasons Hotel Singapore, the sumptuous affair was entrusted to chef Giovanni Speciale, whose menu was designed to reflect the seasonality of the freshest produce. Wines such as Henri Abelé 2002, Henschke Abbotts Prayer 1998, and Clarendon Hills Astralis 2004 accompanied the five-course gastronomic journey, which culminated with an Amedei Chocolate Sphere for dessert and Dow’s Vintage Port. More than an excuse for merriment, the gathering also raised funds for the Singapore Cheshire Home through an auction of rare bottles donated by IWFSS members. The top lot was a Château Haut-brion 1982 donated by Club President Glenn Chin Chao and his wife Symonne Lim.
