Big name restaurant­s have indeed raised Singapore’s profile as a regional dining destinatio­n.

But there would have been nothing to elevate if it didn’t have a rich culinary heritage that it calls its own, to begin with. Being a multicultu­ral society has blessed us with cuisine that is varied, colourful, and interactio­n between the various traditions have given creative chefs new room and added vocabulary with which to create new dishes, around which the idea of a “national cuisine” can begin to take root.
