Big name restaurants have indeed raised Singapore’s profile as a regional dining destination.
But there would have been nothing to elevate if it didn’t have a rich culinary heritage that it calls its own, to begin with. Being a multicultural society has blessed us with cuisine that is varied, colourful, and interaction between the various traditions have given creative chefs new room and added vocabulary with which to create new dishes, around which the idea of a “national cuisine” can begin to take root.
