Singapore Tatler friends, Generation T listers and industry leaders took a gourmet trip to northern Italy with another edition of Tatler Table at Alba 1836. The restaurant’s owner Matteo Trabaldo Togna shared insights into the region’s traditiona­l fare, which is distinguis­hed by its rich textures and heavy use of butter. This is evident in the sumptuous three-course menu comprising the restaurant’s greatest hits: the earthy mushroom veloute topped with creamy slow-cooked egg; fork-tender Milanese-style beef tenderloin with potato puree and cherry tomato confit; and decadent molten chocolate cake paired with vanilla sauce and pistachio ice cream. Togna also brought out his best Italian tipples, adding to the conviviali­ty of the evening.
