Singapore Tatler friends, Generation T listers and industry leaders took a gourmet trip to northern Italy with another edition of Tatler Table at Alba 1836. The restaurant’s owner Matteo Trabaldo Togna shared insights into the region’s traditional fare, which is distinguished by its rich textures and heavy use of butter. This is evident in the sumptuous three-course menu comprising the restaurant’s greatest hits: the earthy mushroom veloute topped with creamy slow-cooked egg; fork-tender Milanese-style beef tenderloin with potato puree and cherry tomato confit; and decadent molten chocolate cake paired with vanilla sauce and pistachio ice cream. Togna also brought out his best Italian tipples, adding to the conviviality of the evening.
