The wild sea bass sashimi is good, with Corsican coppa, finger lime and avocado mousse adding to the subtle taste sensations. Excellent, too, is the chargrilled Spanish octopus—nicely chewy and paired with confit cherry tomatoes, preserved lemon, and pickled padron peppers that add a zing to the dish. The slow-cooked Iberico pork is succulent and elevated with cognac apple compote, buttered turnip, dolcemente and almonds. For dessert, the Artemis tiramisu proves delightful, with amaretto jelly, espresso ice cream, coconut foam and biscotti melding together in sweet indulgence.
