The name of the restau­rant means “steak” in Ital­ian, which is very apt as it’s known for its bis­tecca alla Fiorentina (Floren­tine-style steak). The culi­nary team spent over a year look­ing for that per­fect cut, tast­ing dif­fer­ent meats from all over the world be­fore set­tling on a sup­plier in Aus­tralia. This gor­geous 1.1kg wagyu steak is meant for shar­ing and is served in the tra­di­tional Tus­can man­ner: the thick cut is cooked over a wood-fired grill so that the ex­te­rior gets a bar­be­cued char, while the in­side re­mains juicy. $60-$150/PER­SON 3 $50/BOT­TLE
