At Blue Lo­tus, the sig­na­ture chilli pomelo crab is a must-try—meaty Sri Lankan crab with its sweet flesh floats in a sea of lus­ciously thick deep-red sauce pre­pared with as­sam, chilli, orange and ginger flower. With the ad­di­tion of pomelo sacs, the re­sult is a won­der­ful bal­ance of spicy, sweet and sour flavours. Golden, fluffy man­tou buns al­low the sauce to be mopped up to the last drop. The lemon­grass prawn sticks are rec­om­mended for the fresh, juicy flesh and are paired well with small cubes of fried bangk­wang ( ji­cama or Mex­i­can turnip) for a de­light­ful crunchy tex­ture, with the ac­com­pa­ny­ing spicy cit­rus dress­ing adding a tangy zest. Wok-fried, the richly mar­bled Kagoshima wagyu beef is ten­der to the last mouth­ful. With a glass of wine, sit­ting out­doors with wel­com­ing, knowl­edge­able staff on hand, din­ers are well-placed to un­wind in the hol­i­day at­mos­phere that Sen­tosa is­land pro­vides.
