After helping establish Japanese restaurant­s in Singapore, the friendly chef Tomoo Kimura has opened his eponymous restaurant at Palais Renaissanc­e. He serves Edomae (Tokyo-style) sushi in an omakase menu that showcases Japan’s best offerings. A meal typically begins with appetisers—in this case, fresh tofu skin with dashi jelly, ikura and uni; and tender chawanmush­i made with Hokkaido water, mushrooms and snow crab. After these comes the sushi, which is where Kimura truly shines. He prepares it right in front of diners (complete with his funny anecdotes) in various ways, such as marinating the akami in a special soya-yuzu sauce, or by lightly searing the top of the otoro with coals. A parade of dishes follows, including the truly comforting miso soup with prawn’s head—before the meal ends with seasonal fruits. A range of sake dominates the beverage list, served in miniature tin cups for a smoother taste.
