The kitchen is helmed by executive chef Joey Sergentakis, who serves up modern Asian cuisine that’s complex, visually appealing and delicious. Start with the Hokkaido scallops and oyster ceviche; the appetisers wake up the taste buds with a burst of tanginess from the calamansi, lemongrass oil and pomelo. Exclusively sourced by the restaurant is the Rangers Valley Black Market rib-eye, which is grilled to tender, smoky perfection before it’s plated with sweet potato noodles and kimchi for an Asian twist. This dish goes well with a full-bodied red wine; diners can choose from a wide range of wines available by the bottle and by the glass, spanning different regions. There’s always a sommelier on hand in case you need help with the pairings, too. The overall service is also top-notch.
