On offer is modern Californian cuisine with global accents, which often changes based on the season. The big-eye tuna tartare is always a standout; the finely diced fish is mixed with chilli aioli, scallions, pickled ginger and bonito flakes, and served in crisp cones. The pasta selection is often updated, too, but when you see the white Alba truffle tagliatelle, don’t hesitate to order it. It’s a small portion, but the al dente pasta is redolent in a creamy, decadent white sauce that turns out to be very filling. Don’t worry, you’ll still have space for the crispy-scale sea bass; the meat is cooked to tender perfection, with the scales adding the desired level of crispiness.
