There are many reasons why this sushi-ya stands out from other restaurant­s, one in particular is its aged soy sauce. It’s heavier than we remembered, which makes diners appreciate the nuances of the omakase menu. Seasonal fish, and what we suspect is a penchant for shellfish aside, an appetiser of delicate snapper milk (tai shirako) in a chawanmush­i, is delicious. It’s followed by a serving of Iwashi sardine, marinated in a little salt and vinegar for four days, resulting in a tender bite. Other standouts include bonito marinated with soy, ginger and spring onions; and, more notably, the rare shimofuri—an intricatel­y marbled cut of tuna—served two ways.
