There are many reasons why this sushi-ya stands out from other restaurants, one in particular is its aged soy sauce. It’s heavier than we remembered, which makes diners appreciate the nuances of the omakase menu. Seasonal fish, and what we suspect is a penchant for shellfish aside, an appetiser of delicate snapper milk (tai shirako) in a chawanmushi, is delicious. It’s followed by a serving of Iwashi sardine, marinated in a little salt and vinegar for four days, resulting in a tender bite. Other standouts include bonito marinated with soy, ginger and spring onions; and, more notably, the rare shimofuri—an intricately marbled cut of tuna—served two ways.
