Trained by the likes of Jason Atherton and Gordon Ramsay, he has put forward an enticing menu with gluten-free and vegetarian options. These include the well-seared Hokkaido scallops, drizzled with a light curry oil and paired with pickled cauliflower for refreshing acidity. It whets the appetite for what’s to come: plump Atlantic cod bathed in a delicate vegetable broth, and the divine pasture-fed beef tenderloin, entwined with smoky notes from grilling over charcoal; it’s finished with a piquant black pepper jus. A restaurant of this calibre ensures you get top service, with the staff trained to be sensitive to diners’ needs without being too obtrusive. After the meal, it’s best to head to the al fresco bar for a few drinks where you can get a better view of the bustling central business district—especially at night.
