To start, the hot seafood platter of Boston lobster, softshell crab, succulent king tiger prawns, Hokkaido scallop and Fremantle octopus is simply divine. The buttery foie gras is lightly seared and served with delicious bits of polenta and candied orange zest to add sweetness and balance to the dish. The chef’s deft skills shine through in the delicate Patagonian fish that was cooked just right. It is paired beautifully with a creamy sweet potato purée and miso espuma. Dessert comes in the form of a must-try hot chocolate soup with black pepper ice cream—a novel dish that’s not too overpowering.
