A restaurant focused on one of the gastronomi­c world’s most luxurious ingredient­s will surely find a receptive audience in Singapore—and so it is with Casa Tartufo, which literally translates to “house of truffles”. Chefowner Alex Calabro uses the freshest truffles (sourced from Italy and Australia) in most of his dishes, such as “Alex carpaccio”, a luxurious take on an Italian classic that uses marbled Tajima Wagyu beef, shaved truffles and tajarin. A perennial crowd-pleaser, the seasonal truffles are shaved over thin egg noodles that are simply cooked. One of the signatures is the pasta fredda, a cold dish of angel-hair pasta served with an over-the-top trio of caviar, sea urchin and truffles. Ensuring that the flavours and aromas linger in your mind long after you’ve left the restaurant is the truffle-infused gelato, served for dessert.
