The Clifford Pier at The Fullerton Bay Hotel has been given an elegant makeover by acclaimed designer André Fu. Plush fabric and oriental furniture are juxtaposed against the arched white-concrete trusses of the colonial-era building, presenting the perfect backdrop for the menu, which strikes a fine balance between local flavours and internatio­nal favourites. The heritage platter— a delicious ensemble of kong bak bao (braised pork) with steamed mantou buns, kueh pie tie and grilled satay—is not only good for sharing, but also reflects the cultural diversity in Singapore. A perennial favourite, the laksa comes with a generous serving of seafood or lobster for a more indulgent version. Jumping onto the faux-beef bandwagon, albeit Korean style, is the Impossible beef stone-bowl rice, presented as a piquant and tasty bibimbap. Even more indulgent is the peppery rice vermicelli, braised with an aromatic seafood stock and lala clams. Staff are wellversed on the menu and do their best to take care of the diners.
