Kimme is the bold venture of young Korean chef Seok Hyun

Han, the right-hand man of Meta chef-owner Sun Kim. Like its sister restaurant, the cuisine combines Western techniques and Korean flavours that result in enticing dishes (served in a communal format) that delight and inspire. Take, for example, the Iberico pluma, which comes with a housemade ssamjang—the traditiona­l Korean barbecue sauce that combines the fermented bean paste doenjang and the red chilli paste gochujang. There’s enough spiciness and complex umami to enhance the flavour of the tender meat. While grilled meat in Korea is typically served with kimchi, Han gives the dish a local twist by serving it with spicy achar. Drinks-wise, there’s an impressive line-up of Asian spirits, sake and Korean liquor; pairing very well with the dishes is the omegisool, a traditiona­lly fermented sweetand-sour alcoholic beverage crafted from glutinous rice. The restaurant is fronted by a young and energetic staff who do their best to cater to the requests of customers, as well as give food and drink recommenda­tions.
