Labyrinth appears elegantly subdued from the outside, giving little hint as to its culinary persuasion. But when the dinner starts, the creativity and pride in everything Singaporean shines right through in every course. The rojak is one of the most visually stunning versions of this local salad, comprising a delicious combination of garden herbs, natural stingless bee honey and jackfruit sorbet. Comfort food beautifully plated, the ang moh chicken rice is a homemade delight of braised chicken and chilli sauce, wrapped in a pillowy-soft rice flour dumpling and doused with a scrumptious creamy local mushroom sauce. One of the highlights of the evening, the sweet meat of locally caught wild crab pairs perfectly with chilli ice cream, egg-white noodles and salted mackerel. Uncle William’s quail hits the right spots and is done two ways—grilled with satay spices and satay espuma, and prepared with rosé wine sauce, herbs and pearl onion.
