Spanish chefs have been making a collective beachhead in our culinary consciousn­ess and, judging by the quality of new Spanish eateries such as Gaig, which opened in 2017 after a brief sojourn in Dempsey Hills as La Ventana, the quality of Spanish food is arguably better than its European counterpar­ts. An offshoot of the original Gaig in Barcelona, which opened in 1869, the Singaporea­n outpost is managed by Núria Gibert, the daughter of owner-chef Carles Gaig, who makes occasional guest appearance­s in Singapore. Like the sparsely elegant interiors, the food thankfully doesn’t veer towards the predictabl­e. Even with the selection of tapas, head chef Marti Carlo Martinez has infused a hint of subtle modernity in the flavours and textures presented, with every dish served on beautiful plateware that’s hand-carried back from Spain by Gibert.
