Spanish chefs have been making a collective beachhead in our culinary consciousness and, judging by the quality of new Spanish eateries such as Gaig, which opened in 2017 after a brief sojourn in Dempsey Hills as La Ventana, the quality of Spanish food is arguably better than its European counterparts. An offshoot of the original Gaig in Barcelona, which opened in 1869, the Singaporean outpost is managed by Núria Gibert, the daughter of owner-chef Carles Gaig, who makes occasional guest appearances in Singapore. Like the sparsely elegant interiors, the food thankfully doesn’t veer towards the predictable. Even with the selection of tapas, head chef Marti Carlo Martinez has infused a hint of subtle modernity in the flavours and textures presented, with every dish served on beautiful plateware that’s hand-carried back from Spain by Gibert.
