Shoukouwa sets itself apart from the many premium washoku restaurants in Singapore by focusing on what it does best—that is, providing a worldclass fine-dining Edomae sushi experience. As the name of the restaurant suggests, the two different omakase menus for dinner focus predominantly on nigiri sushi only, finished with a hot miso soup and a traditional serving of Japanese omelette. For those looking for a menu that offers other courses such as sashimi or non-seafood cooked dishes, this isn’t the restaurant for you. The sense of discipline carries through to the excellent sake list, where more than 60 different labels from blue-chip breweries such as Niizawa and Nabeshima, for those in the know, are presented according to their prefectures of origin. Having undergone an extensive refurbishment this year, this intimate sushi-ya is one of the few places in town to impress or be impressed.
