Being situated on the 70th floor of Swissôtel The Stamford has given Skai a distinct advantage—it’s a great place to create beautiful memories, especially against the stunning Singapore skyline. Staff are warm and attentive, while the produce-driven menu features a wide selection of contempora­ry dishes with a nod to Asian ingredient­s. This focus is especially prominent in starters, such as the tuna tataki tossed in sesame ponzu and the Spanish octopus with shiso. When it comes to the mains, especially the meats, executive chef Paul Hallett shows his extensive experience in butchery, sourcing and curing premium quality beef. Thanks to him, Skai has quite an impressive selection of specially sourced artisanal beef from all over the world. The three types of beef we ordered were expertly grilled, with sufficient smokiness as well as tenderness.
