It’s not just the location and the unparalleled views of the city that draw diners here; it’s also the sophisticated approach and roster of refined dishes that make this a magnet for regulars. Upon arrival, you’re greeted by friendly servers who answer questions with confidence and are eager to help, whether you’re contemplating getting the set menu or going à la carte. We started with seasonal Japanese sashimi, a sharing plate that’s an ideal appetiser. Spago shines in creating classic dishes made just the way you want them—and that’s exactly what we encountered when we moved onto the main course. We had the Bucatini trippa alla Romana and the highly recommended Colorado lamb chops, both of which were essentially faultless. The restaurant’s stellar wine selection is also definitely worth perusing.
