Syun is celebrity chef Hal Yamashita’s Singapore outpost that serves a best-of compilation of his Tokyo restaurant mainstays—a robust Japanese curry, shabu shabu with Kagoshima A4 Wagyu, Kagoshima kurobuta pork, seafood, tempura, sushi and sashimi. About a third of the menu features Western ingredients or fusion-style dishes, such as teriyaki balsamic chicken with shaved aged cheese and snapper sashimi in a soy sauce dressing with truffle. The latter is a fantastic flavour bomb, as is the caviar-topped Wagyuwrapped uni, which melts exquisitely in the mouth. The beef curry with rice (a lunch special, but can be ordered at dinner as an off-menu dish) is a departure from the typically sweet and mild Japanese version most people know. Sweetened with apples, the dark, intensely spiced curry is fruity and tangy, and not chilli-hot. Families and tourists alike will feel comfortable with the welcoming service and the cosy space.
