Prime Season
Kuriya Dining offers the best of seasonal produce in its monthly course menus curated by master chef Naoki Tsuzuki
While Singapore’s dynamic F&B scene sees a new restaurant opening every other day, only a handful last the distance. So it’s both heartening and reassuring that restaurants such as Kuriya Dining have been in the business for 15 years. Popular among its well-regarded clientele for its Japanese spirit of hospitality and service, or what is known as Kuriya Dining by RE&S Enterprises prides itself on delivering personalised and attentive service towards each guest. More than that, its cuisine is centred on the traditional dietary cultures of Japan, which had been included in the Unesco Intangible Cultural Heritage list since 2013. Master chef Naoki Tsuzuki effortlessly executes the essence of traditional Japanese cuisine using seasonal fish, vegetables and fruits that reflect the passing of seasons. This is apparent in Kuriya Dining’s monthly course menu, which comprises seven creative dishes—an appetiser, sashimi, a grilled or fried dish, a steamed or simmered dish, sushi, soup and dessert. Featuring seasonal fish and produce air-flown directly from Japan at least thrice weekly by the Osakabased RE&S procurement team which ensures stringent quality control, these exquisite creations showcase the master chef’s techniques that are imperative in his execution. Master chef Tsuzuki is constantly curating new dishes that pique the taste buds, so diners at Kuriya Dining can be assured that his creations will not disappoint. The veteran chef has been widely recognised for his cooking flair, judging from the accolades he has won over the years. And one would know that traditional Japanese dishes are best appreciated with a glass of premium sake. While Kuriya Dining offers an exclusive selection of Japanese sake and shochu, as well as whisky, the master chef, who is also a certified sake sommelier, recommends the Junmai Daiginjo, an original sake he concocted together with master brewer Takaaki Goto of sake brewery Gyokusendo Shuzo in Japan’s Gifu prefecture. Premium-quality sake rice Yamada Nishiki is harvested in the best-conditioned rice field in the Hyogo prefecture and painstakingly brewed to yield a delicate glass with hints of a floral and fruity aroma. When paired with Tsuzuki’s tantalising dishes, the Junmai Daiginjo promises to elevate the dining experience. Guests will leave charmed by the authentic experience of Japanese culture and impeccable service provided by Kuriya Dining.
