A cheese-and-wine pairing is followed by the Estate Chestnut: an indulgent chestnut hidden under a sprinkling of leaves and herbs. Smooth smoked snoek is complement­ed by a tart apricot teriyaki, radishes and a nori sago crisp for crunch. Pine-roasted quail served with chicken of the woods comes as a quail sausage and pine needle-smoked breast. The springbok tartare melts in your mouth, with pale dollops of avocado, horseradis­h and crisp kataifi pastry. Dessert comprises comforting flavours of Granny Smith apple, burnt milk and golden hazelnut, or a decadent chocolate tart. DRINKS The wine list will make any wine-lover swoon.
