FOOD Fabio Daniel is quickly taking the restaurant to new heights after the departure of John Shuttleworth, cooking addictive food that, once tasted, must simply be enjoyed again and again. Regulars swear by the six-course menu with sensational wine pairing, featuring the simple perfection of tuna with sesame, wild rice, and coriander; crown roasted duck breast with broccoli, red cabbage, pistachio and cucumber; or Wagyu brisket sundried tomato, crème fraîche, red pepper and portobellini mushrooms. The chef uses desserts to push his guests’ palates and play with flavours; expect nouvelle mash-ups such as strawberries and meringue with balsamic vinegar.
