Cowboy food with beer bread rolls (opposite)

The perfect combo for a midweek braai: you don’t need a massive fire to braai the rolls and the cowboy food can be air-fried, chop-chop! You’ll have enough time to braai after work… Serves 4-6

COWBOY FOOD

2 x 200 g packets streaky bacon, diced 2 large onions, roughly chopped

4 garlic cloves, finely chopped

30 ml olive oil

410 g tin butter beans, drained

410 g tin red kidney beans, drained

410 g tin borlotti beans, drained

2 x 410 g tins chopped tomatoes

5 ml mixed dried herbs

5 ml dried chilli flakes (optional)

100 ml red wine salt and freshly ground black pepper Preheat air-fryer to 200°C on air-fry function. Remove the loose rack at the bottom of the basket if your air-fryer has one (or use a pot that fits inside the basket). Air-fry the bacon, onions and garlic in the olive oil for 5 minutes. Add all the beans as well as the tomatoes, herbs, chilli flakes (if you want to) and wine. Stir and season well with salt and pepper. Air-fry for 25 minutes, stirring every 5 minutes. Set aside while you make the rolls, or serve on its own.

BEER BREAD ROLLS coals for braaiing

550 g (980 ml) white bread flour 30 ml baking powder

5 ml salt

340 ml can of beer

15 ml olive oil

115 g (125 ml) butter, melted

Prepare medium-hot coals. Place all the dry ingredient­s in a large mixing bowl. Add beer and olive oil. Mix well and knead for about 10 minutes. Divide dough into 9 balls and flatten them between your palms until about 10 cm x 10 cm in size. Place in a folding grid and braai slowly for about 5-8 minutes a side or until golden brown and done. Brush warm rolls with butter and serve with cowboy food.
