Apple peanut sponge dessert

COOLER evenings are a good time to begin enjoying hot desserts that are quick and easy to prepare using everyday ingredient­s. This has potential for becoming a family favourite.

Prep Time: 15 minutes Cook Time: 30 minutes

INGREDIENT­S

Sponge 45ml SPAR margarine, soft 250 ml SPAR castor sugar (210g) 3 large SPAR eggs 250 ml SPAR cake flour (120g) 5 ml baking powder Pinch of salt 60 ml SPAR milk 410g can pie apples Sauce 40ml SPAR soft margarine 80ml SPAR peanut butter 125ml SPAR milk 250ml SPAR castor sugar 10ml caramel or vanilla essence crunchy

METHOD

Pre-heat oven to 180°C. Grease a 20cm oven dish.

Beat the margarine, sugar and eggs together thoroughly until fluffy.

Sift the flour, salt and baking powder together directly onto this mixture, and along with the milk, blend together slowly to a smooth batter. Spoon the canned apples into the prepared oven dish and pour the batter over. Bake for 30 minutes.

Ten minutes before the baking time is up, combine the sauce ingredient­s in a saucepan, and while stirring, bring almost to the boil.

Pour this sauce over the hot sponge as it’s removed from the oven. Set aside for some of the sauce to sink into the sponge. Hints and Tips: Try substituti­ng the peanut butter with chocolate sandwich spread

Prick the sponge all over as it comes out the oven, to encourage maximum sauce penetratio­n.
