The basic rule for a vinaigrett­e is one part red wine vinegar or apple cider to two parts quality olive oil. Add one or two spoons of English mustard, the same amount of sugar, half a teaspoon of dried, mixed herbs and a teaspoon of chopped garlic. Make sure the container is firmly sealed, shake well and taste to see if you want to add more garlic, vinegar or sugar. The longer the dressing stands, the better. Then just shake it well before use. For a creamier dressing, pour a bit of sauce in a container and blend it with the same amount of plain yoghurt.
