GREEK KLEFTIKO PARCELS

Kleftiko is a Greek meal that consists of meat baked in parcels over a coal fire. Now you just need some ouzo to get the party started!

INGREDIENT­S:

750 g lamb mince 3 tablespoon­s olive oil 3 tablespoon­s lemon juice 2 teaspoons chopped oregano 2 teaspoons chopped rosemary 2 tablespoon­s finely chopped garlic 2 tomatoes, sliced into blocks good quality cheese, like a matured cheddar 4 bay leaves salt and pepper foil

HERE’S HOW:

Mix the lamb mince, olive oil, lemon juice, herbs and garlic and allow it to marinade at room temperatur­e for about 2 hours. Cut a piece of foil of about 30x30 cm and place it in a container. Now divide the mince into four and place one of these in the foil. Sprinkle some of the tomato over, then add two slices of cheese and press the bay leaves into the meat, adding salt and pepper to taste. Fold the foil closed to form a type of parcel. Repeat this with the rest of the meat. Braai the parcels over moderate coals. Place them on top of a grid that’s relatively close to the coals. Allow them to cook for about 30 minutes, until done.
