CORN FRITTERS

These quick-and-easy fritters are the perfect breakfast if you are in the mood for something out of the pan but don’t have time to make a huge breakfast.

INGREDIENT­S:

1 cup self-raising flour ⅔ cup milk 1 teaspoon salt 1 large egg 1 can whole corn kernels, drained 3 chillies, finely chopped ½ onion, finely chopped Oil

HERE’S HOW:

Mix the flour, milk, salt and egg together. Add the corn, chillies and onion and mix well. Heat a quarter cup oil in a pan, but not so hot that it starts smoking. Measure out large spoonfuls of the mixture into the pan and cook for about two minutes before turning over. Cook on both sides until the fritters are golden brown. It’s delicious as is but you can also serve it with butter, apricot jam and cheese.

There are a lot of very tasty dishes that can be whipped up with food in a tin – and not just beans on toast.
