DRUM - Air Fryer

CHILLI & CORIANDER CHICKEN WITH ROAST POTATOES

SERVES 4 PREPARATIO­N: 15 MINUTES COOKING: 30-40 MINUTES

CHICKEN

➧ 4 chicken wings

➧ 4 drumsticks

➧ salt and freshly ground pepper

➧ 15ml (1T) roughly ground, toasted coriander seeds

➧ 2 garlic cloves, chopped

➧ 4 chillies, chopped OR 15ml (1T) dried chilli flakes

➧ the juice and grated zest of 1 lemon

➧ 30ml (2T) olive oil

POTATOES

➧ 800g baby potatoes, cooked

➧ 15ml (1T) olive oil

➧ salt

➧ a handful of fresh coriander, chopped

Preheat the air fryer for 2-3 minutes to 200°C. Line the air fryer basket or a baking sheet that fits in the fryer with baking paper and grease well with nonstick spray. Grease a second baking sheet with nonstick spray and keep handy.

1 Chicken Put the chicken portions in a bowl and season with the salt and pepper. Sprinkle the coriander seeds over, followed by the garlic, chillies, zest and juice. Mix through.

2 Drizzle the oil over and transfer the chicken to the basket or baking sheet. Roast the chicken for 15 minutes, turn over and roast for another 10-15 minutes or until golden brown and cooked.

3 Potatoes Cut the potatoes in half if preferred. Drizzle the oil over and season with salt.

4 Arrange the potatoes on the second baking sheet and roast for 15 minutes in the air fryer. Turn over and roast for another 15 minutes or until golden brown and crispy.

5 Sprinkle the coriander over the potatoes and serve with the chicken.
