Rainbow pasta salad

SERVES 6 PREPARATIO­N: 10 MIN COOKING: 8 MIN CHILLING: 2 HR

500g coloured spiral pasta 1 red onion, minced

1 each green, yellow and red

peppers, chopped

2 red chillies, chopped 250ml (1c) mayonnaise 200ml plain yoghurt

1 Bring a large pot of lightly salted water to the boil. Add the pasta and cook for 8 minutes or until al dente. Drain and rinse under cold water.

2 In a large bowl, combine the cooked pasta, minced onion, green, yellow and red peppers and chillies.

3 In a separate bowl, mix the mayonnaise and yoghurt together. Pour over the pasta and mix lightly.

4 Refrigerat­e for at least 2 hours before serving.

This is an easy “toss and take to a braai” salad.
