Rain­bow pasta salad

SERVES 6 PREPA­RA­TION: 10 MIN COOK­ING: 8 MIN CHILL­ING: 2 HR

Drum Food - - CONTENTS -

500g coloured spi­ral pasta 1 red onion, minced

1 each green, yellow and red

pep­pers, chopped

2 red chillies, chopped 250ml (1c) may­on­naise 200ml plain yo­ghurt

1 Bring a large pot of lightly salted wa­ter to the boil. Add the pasta and cook for 8 min­utes or un­til al dente. Drain and rinse un­der cold wa­ter.

2 In a large bowl, com­bine the cooked pasta, minced onion, green, yellow and red pep­pers and chillies.

3 In a sep­a­rate bowl, mix the may­on­naise and yo­ghurt to­gether. Pour over the pasta and mix lightly.

4 Re­frig­er­ate for at least 2 hours be­fore serv­ing.

This is an easy “toss and take to a braai” salad.
