Beef goulash pasta

SERVES 6 PREPA­RA­TION: 10 MIN COOK­ING: 2 HR 10 MIN

45ml (3T) olive oil

1kg beef goulash

250g ba­con, chopped

1 car­rot, roughly chopped 1 onion, finely chopped

250g mush­rooms salt and pep­per

3 gar­lic cloves, minced

500ml (2c) beef stock hand­ful fresh thyme, chopped 300g spi­ral pasta, cooked 60ml (¼c) grated pecorino

1 Heat the oil in a saucepan over medium heat then add the beef and brown in batches. Stir in the ba­con, car­rot, onion and mush­rooms. Sea­son with salt and pep­per. 2 Cook un­til the veg­eta­bles are done and fra­grant.

3 Add the gar­lic and stir through. Pour in the stock and add the fresh thyme.

4 Re­duce the heat to low, bring to a sim­mer and cook for 2 hours or un­til the meat is ten­der.

5 Add the cooked pasta to the sauce, toss and sprin­kle the cheese over.

Goulash is one of the na­tional dishes of Hun­gary. We added ba­con for ex­tra flavour.
