Beef goulash pasta
SERVES 6 PREPARATION: 10 MIN COOKING: 2 HR 10 MIN
45ml (3T) olive oil
1kg beef goulash
250g bacon, chopped
1 carrot, roughly chopped 1 onion, finely chopped
250g mushrooms salt and pepper
3 garlic cloves, minced
500ml (2c) beef stock handful fresh thyme, chopped 300g spiral pasta, cooked 60ml (¼c) grated pecorino

1 Heat the oil in a saucepan over medium heat then add the beef and brown in batches. Stir in the bacon, carrot, onion and mushrooms. Season with salt and pepper. 2 Cook until the vegetables are done and fragrant.
3 Add the garlic and stir through. Pour in the stock and add the fresh thyme.
4 Reduce the heat to low, bring to a simmer and cook for 2 hours or until the meat is tender.
5 Add the cooked pasta to the sauce, toss and sprinkle the cheese over.
Goulash is one of the national dishes of Hungary. We added bacon for extra flavour.
