Beef and cabbage curry with maize rice
SERVES 4-6 PREPARATION: 15 MIN COOKING: 1 HR 50 MIN
15ml (1T) oil
500g beef goulash meat 1 onion, sliced
15ml (1T) curry masala 2,5ml (½t) turmeric
5ml (1t) ground ginger 2 tomatoes, chopped 400ml water
¼ cabbage, shredded salt and pepper
MAIZE RICE
500ml (2c) water 2,5ml (½t) salt 250ml (1c) maize rice
1 Heat the oil in a pot and brown the beef in batches. Remove from the pot.
2 In the same pot, cook the onion until soft. Add the spices and cook for 2 minutes or until fragrant.
3 Add the tomatoes and water and simmer for 1 hour. Add the cabbage and simmer for 30 minutes. Season with salt and pepper.
4 MAIZE RICE Over medium heat, bring the water and salt to the boil in a pot. Reduce the heat and stir in the maize rice. Cook, stirring with a fork, until the rice is tender. Remove from the heat, cover and set aside for 5 minutes. Serve with the curry.
