Spiced whole chicken

SERVES 6 PREPA­RA­TION: 5 MIN COOK­ING: 1 HR 15 MIN

1kg chicken

30ml (2T) oil

80ml (¹∕₃c) dark brown sugar 60ml (¼c) pa­prika

45ml (3T) chilli pow­der

10ml (2t) gar­lic pow­der

5ml (1t) cumin salt and pep­per

Pre­heat the oven to 180°C.

1 Brush the chicken with the oil. Mix the sugar and spices in a small bowl and rub on the chicken.

2 Trans­fer to a roast­ing pan and cook for 75 min­utes or un­til done (see tip).

3 Cut the chicken into pieces and serve with sal­ads of your choice.
