Sweet po­tato and white bean soup

SERVES 6 PREPA­RA­TION: 5 MIN COOK­ING: 2 HR 20 MIN

Drum Food - - CONTENTS -

15ml (1T) olive oil

1 onion, chopped

2 gar­lic cloves, chopped

250ml (1c) white kid­ney beans,

soaked in wa­ter overnight 5ml (1t) dried chilli flakes

1,5L (6c) chicken stock

800g red sweet po­tato,

peeled and chopped salt and pep­per hand­ful fresh co­rian­der,

chopped

1 Heat the oil in a saucepan over medium heat. Add the onion and gar­lic and cook for 4 min­utes or un­til soft­ened.

2 Add the beans, chilli flakes and stock. In­crease the heat to high and bring to the boil. Cook for 2 hours or un­til the beans are ten­der.

3 Add the sweet pota­toes and cook for 15 min­utes or un­til the sweet pota­toes are ten­der.

4 Sea­son with salt and pep­per and sprin­kle co­rian­der on top.
