Sweet potato and white bean soup
SERVES 6 PREPARATION: 5 MIN COOKING: 2 HR 20 MIN
15ml (1T) olive oil
1 onion, chopped
2 garlic cloves, chopped
250ml (1c) white kidney beans,
soaked in water overnight 5ml (1t) dried chilli flakes
1,5L (6c) chicken stock
800g red sweet potato,
peeled and chopped salt and pepper handful fresh coriander,
chopped
1 Heat the oil in a saucepan over medium heat. Add the onion and garlic and cook for 4 minutes or until softened.
2 Add the beans, chilli flakes and stock. Increase the heat to high and bring to the boil. Cook for 2 hours or until the beans are tender.
3 Add the sweet potatoes and cook for 15 minutes or until the sweet potatoes are tender.
4 Season with salt and pepper and sprinkle coriander on top.
