Peanut but­ter fudge

MAKES 28 PREPA­RA­TION: 10 MIN COOK­ING: 4 MIN

125g but­ter

625ml (2½c) dark brown sugar

125ml (½c) milk

250g crunchy peanut but­ter 5ml (1t) vanilla essence 375ml (1½c) ic­ing sugar

1 Melt the but­ter in a saucepan over medium heat. Stir in the sugar and milk and keep stir­ring (see tip) un­til the sugar has dis­solved then slowly bring to the boil with­out stir­ring.

2 Re­move from the heat and stir in the peanut but­ter and vanilla essence.

3 Put the ic­ing sugar in a large bowl and pour the hot peanut but­ter mix­ture on top. Beat the mix­ture with a wooden spoon un­til smooth.

4 Pour into a 20 x 20cm square bak­ing sheet and spread evenly if nec­es­sary. Set aside to cool com­pletely.

5 Cut the fudge into squares with a sharp knife and store in an air­tight con­tainer.
