PAPRIKA PORK STEW

Serves4 PREP TIME: 15 min plus 1 hr 45 min cooking time

• 3 tbsp olive oil • 1 tbsp butter • sea salt and black pepper • 800g pork leg cubes • flour for dusting • 8 baby onions, peeled • 2 large carrots, chopped • 3 stalks celery, chopped • 2 red peppers, thickly sliced • 2 tsp paprika • 2 tbsp tomato paste • 3½ cups chicken or beef stock • fresh herbs, to serve

1. Heat 2 tbsp olive oil and butter in a heavy-based pot, season the pork cubes and toss in the flour.

2. Brown the cubes on all sides, then remove from the pot and set aside. Wipe the pot clean, and add 1 tbsp olive oil. Toss in the vegetables and sauté until golden, return the meat to the pan, sprinkle over the paprika and add tomato paste; cook for 30 seconds, stirring frequently.

3. Add stock, and bring to a simmer, cooking the stew gently and partially covered for 1½ hours or until the pork is very tender. Season with salt and milled black pepper to taste.

4. To serve: Garnish with fresh herbs or rocket and serve with creamy potato mash.
